This year is flying past. One minute we’re preparing to go back to work having over indulged at Christmas, and all of a sudden we’re half way through February. You blink and 6 weeks have gone by without you even noticing. Now that I think about it, this has been going on for a few years now. I’m almost certain that last week I was in my early 20s. The only explanation is that there has been some sort of governmental cover up and the calendars have been fiddled. We’ve all been duped into thinking that it’s 2017 when it’s actually only 2012. They’ve crammed 10 years into 5 and we’ve all fallen for it.
Before we know it Pancake Day is going to be upon us. Ah, Pancake Day. The final face stuffing before you have to give up everything for Lent. In other countries Pancake Day is known as Mardi Gras which literally translates as Fat Tuesday.
With this green light to go totally overboard and in a bid to sidestep the same old same old lemon and sugar combo, I've been doing a bit of research on some new and interesting potential topping ideas. Here’s a few that I found that I think sound flipping (excuse the pun) delicious
Pancakes with spiced apple compote - Melt the butter in a medium pan, then add the apples, cinnamon stick, cloves, star anise, ginger and a good splash of water. Cover and cook for 5 minutes over a medium heat, then drain any excess liquid. Fill the pancakes with a spoonful of the compote, a drizzle of maple syrup and a dollop of soured cream.
Pancakes with Parma ham and asparagus - Place a slice of ham on top of a pancake, then arrange three boiled asparagus spears upon it. Roll up and place into a lightly buttered baking dish. Bake in the oven for about 20 minutes. When done, coat each one carefully with a spoonful of hollandaise sauce and serve.
Honey, feta and thyme pancakes - Put the pancakes on serving plates and crumble over the feta. Drizzle with honey and scatter the thyme leaves over the top. Serve hot or cold.
Pancakes with berries and white chocolate - Melt the chocolate in a heatproof bowl set over a pan of gently simmering water. Alternatively, melt the chocolate in short bursts in a microwave. Put a pancake on each serving plate and divide frozen berries between them. Drizzle the melted chocolate over the top and serve immediately.
Brunch pancakes - Top each pancake with 2 pieces of avocado and 2 rashers of bacon. Drizzle over a little yoghurt and chilli sauce, grate over a little more lime zest and pick a few coriander leaves on top.
As you know, pancake day (also known as Shrove Tuesday) is on a different day every year as it falls in line with the moveable feast that is Easter day. This year it is on Tuesday 28th February - I can already smell the batter!
